Instead of dialing for take-out, or worse, skipping lunch altogether, try this 5 minute lunch recipe for a delicious, and in-season salad.
Heirloom Tomato & Avocado Salad
When paired with creamy avocado and the sweet, peppery taste of basil, heirloom tomatoes shine in this mid-day meal. A quick slice and this delicious and refreshing spring salad is ready to be served.
1 large sliced tomato
8 heirloom tomatoes, sliced to preference
½ avocado, sliced
¼ red onion, thinly sliced
1 sprig of basil leaves, finely chopped
1 tablespoon green lemon olive oil
½ tsp golden balsamic vinegar
Salt and pepper to taste
1. Place large tomato slices on a serving plate. Layer with thinly sliced onion. Add avocado slices and halved heirloom tomatoes.
2. In a small bowl, slowly whisk the green lemon olive oil into the balsamic vinegar until emulsified. Season with salt and pepper.
3. Pour dressing over the salad and season with more salt and pepper if preferred. Sprinkle with basil leaves.
